Creative Ways to Use Hard-Boiled Eggs

As a quick filling for breakfast burritos.

Hard-boiled eggs make an easy substitute for scrambled! In a large tortilla, add roughly chopped eggs, black beans, tomato salsa, chopped peppers, avocado, and shredded cheese. Wrap tightly and sear in a lightly oiled pan on the stove for 5-minutes on both sides until warm.

On mini egg pizzas.

Toast an English muffin and top with tomato slices, fresh basil leaves, sliced hard-boiled eggs, and a sprinkling of mozzarella cheese. Season with a little True Lemon Pepper then place in the oven on broil for a few minutes until the cheese is melted. This also works great in a toaster oven!

On a breakfast salad.

It may sound strange, but having salad for breakfast is a great way to get a big boost of nutrition before going about your day. On a bed of mixed greens, add sliced eggs, diced avocado, about 1-ounce of smoked salmon (optional), goat cheese crumbles, a sprinkle of True Lemon, and a drizzle of olive oil. This one never gets old! Peel eggs, slice in half, and scoop out the yolks. Add to a bowl with a dollop of mayo, and a generous sprinkling of True Lime, Garlic & Cilantro. Blend with a hand mixer until creamy, then scoop the filling back into the eggs. Garnish with some extra fresh chopped cilantro, if desired!

In egg salad.

Chop 4-5 hard-boiled eggs, and mix together in a bowl with 2 teaspoons of mayonnaise, 1 teaspoon Dijon mustard, a dash of salt and your favorite salt-free seasoning blend, and a handful of chopped green onions. Serve on a slice of toast over fresh spinach or arugula, and sprinkled with paprika.
