A simply fresh and healthy salad that's packed with protein. It is incredibly refreshing on a warm spring or summer day!

Ingredients
- 12 oz
cooked shelled shrimp
 - 1
small Granny Smith apple, cored and thinly sliced
 - 4
packets of True Orange dissolved in 2 tablespoons of water
 - 2 tbsp
extra virgin olive oil
 - 1 tsp
hot pepper sauce (such as Tabasco)
 - 1
head red or green leaf lettuce, torn into pieces
 - 2 tbsp
toasted pine nuts (for garnish)
 Sliced cherry tomatoes (as garnish, optional)
Salt & pepper
Directions
- In a large bowl, toss together the shrimp, Granny Smith apple, True Orange juice, olive oil, and hot pepper sauce.
 - Add the leaf lettuce, and season with salt & pepper.
 - Divide onto two serving plates, and garnish with pine nuts and optional tomatoes for color.
