This is a delicious (and nutrient-dense) dish to throw together as a side dish. It's also great when served with a side of tortilla chips for scooping!

Fresh black bean and corn salad with colorful vegetables

Ingredients

  • 15 oz

    can black beans, drained and rinsed

  • 11 oz

    can whole golden corn, drained (frozen works great too!)


  • 1/2

    medium tomato, chopped

  • 1/2

    red or green pepper, diced


  • 1/4 c

    fresh cilantro, chopped

  • 1/4

    small red onion, diced

  • 2 tbsp

    olive oil


  • A pinch each of salt and pepper (to taste)


Directions

  1. Using a large bowl, mix together all the ingredients.
  2. This salad is best refrigerated until it's ready to be served, to let the flavors meld together.
