This is a delicious (and nutrient-dense) dish to throw together as a side dish. It's also great when served with a side of tortilla chips for scooping!

Ingredients
- 15 oz
can black beans, drained and rinsed
- 11 oz
can whole golden corn, drained (frozen works great too!)
- 1/2
medium tomato, chopped
- 1/2
red or green pepper, diced
- 1/4 c
fresh cilantro, chopped
- 1/4
small red onion, diced
- 2 tbsp
olive oil
A pinch each of salt and pepper (to taste)
Directions
- Using a large bowl, mix together all the ingredients.
- This salad is best refrigerated until it's ready to be served, to let the flavors meld together.
