This recipe puts the power in your hands: choose your potato, cut it your way and flavor it with your favorite True Citrus seasoning. No preservatives. No unnecessary salt. Just a real-deal, better-for-you chip made with natural flavor and ingredients you actually recognize.  

Whether you're team sweet potato, loyal to the kettle chip or experimenting with gold and russet potatoes, you can create a version of this recipe that’ll win over your taste buds. Even better – just store these in an airtight container to snack on whenever you want!  

Want to mix things up? Go half-and-half with sweet potato slices and gold potatoes for color and variety. These homemade chips are totally customizable and snack-time approved!

Ingredients

  • 2

    Large Russet or gold potatoes (you can also use sweet potatoes for a colorful!) 

  • 1 tbsp

    Olive oil or vegetable oil (or more, depending on cooking method) 

    • True Citrus Salt-Free Seasonings 
    • We love: 
    • Lemon Pepper 
    • Lime Garlic Cilantro 
    • Get creative and try True Lemon or True Lime with spices you probably already have in your cupboard (Garlic, Onion, Chili – just to name a few) 
  • Optional: black pepper, onion and sour cream dip, salt (if desired) 

  • Tools 

    • Mandoline slicer or sharp knife 
    • Large bowl 
    • Paper towel 
    • Clean kitchen towel 
    • Baking sheet, air fryer or hot oil and pan 
    • Wire rack (optional) 
    • Slotted spoon 
    • Parchment paper 


Directions

  1. Step 1: Slice & Soak Wash and scrub your potatoes or sweet potatoes well—no need to peel unless you prefer it. Use a mandoline slicer or sharp knife to slice potatoes as thin and evenly as possible. Place sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain, then pat dry thoroughly using a paper towel and a clean kitchen towel.
  2. Step 2: Choose Your Cooking Method Air Fryer Potato Chips (Quick & Crispy) Great for small batches and minimal oil. Preheat your air fryer to 375°F. Toss your sliced potatoes in a little olive oil—just enough to coat. Arrange the slices in a single layer in the basket. Don’t overcrowd! Cook for 12–15 minutes, flipping halfway through. Watch them toward the end—cooking time can vary based on potato slice thickness. Sprinkle with your favorite True Citrus Salt-Free Seasoning while warm.
  3. Oven-Baked Potato Chips (Golden & Crispy) Perfect for a bigger batch and more hands-off cooking. Preheat oven to 400°F. Line a baking sheet with parchment paper. Arrange sliced potatoes in a single layer and lightly brush with olive oil. Bake for 15–20 minutes, flipping once halfway through, until edges are golden brown. Season with True Citrus blends like Lemon Pepper, Garlic Cilantro Lime or get creative and use True Lime with some chili powder (like chile guajillo, chile ancho, chile de arbol or any of your favorite dried chiles) for an extra kick.
  4. Fried Potato Chips (For That Classic Kettle Crunch) Want that nostalgic crispy chip snap? This one’s for you. Heat vegetable oil in a heavy-bottomed pan to 350°F (watch that oil temperature!). Gently add a few potato slices at a time using a slotted spoon. Fry for 2–3 minutes, or until golden brown and bubbly. Transfer to a paper towel to drain excess oil. While still warm, season generously with your chosen True Citrus flavor.
