Apple Crumb Pie with a True Lemon Crust

Ingredients

  • For the Crust:

  • 3/4 c

    shortening

  • 2 c

    all-purpose flour

  • 1 tbsp

    sugar

  • 1 tsp

    salt

  • 1

    egg yolk

  • 1/4 c

    cold milk

  • For the Filling:

  • 5 c

    apples, thinly sliced

  • 2 tbsp

    all-purpose flour

  • 2/3 c

    sugar

  • 1/2 tsp

    cinnamon

  • 1/4 tsp

    nutmeg

  • 1/4 tsp

    allspice

  • 2 tbsp

    unsalted butter

  • For the Topping:

  • 3/4 c

    all-purpose flour

  • 1/2 tsp

    cinnamon

  • 1/2 c

    light brown sugar

  • 3/4 c

    rolled oats

  • 1/2 c

    unsalted (cold) butter

Directions

  1. Preheat oven to 375 degrees.
  2. Crust: in a small bowl, cut shortening into flour, sugar and salt until the mixture looks like cornmeal or small peas.
  3. In another bowl, beat egg yolk slightly and combine with milk and True Lemon.
  4. Add to flour mixture and mix by hand until it forms a ball.
  5. Divide dough in half and store one crust in refrigerator in plastic wrap for later or make 2 pies.
  6. Roll out dough on a well-floured surface to fit a 9-inch pie plate.
  7. Filling: in a large bowl, combine apples, flour, sugar, cinnamon, nutmeg, allspice, and True Lemon. Pour into prepared pie shell and dot with butter.
  8. Topping: combine flour, cinnamon, brown sugar, rolled oats, True Lemon, and butter. Sprinkle evenly over filling mixture.
  9. Bake in 375 degree oven for 45-60 minutes or until topping is golden brown and apples are bubbly.
